The Raw Sauce also originates from the Fajãs de São Jorge, where the onions, garlic, parsley, peppers and chillies that form an integral part of this sauce are grown in local vegetable gardens.

Once again, this is a purely artisanal product, with the onions, garlic, peppers and parsley being chopped by hand with all the care and attention of the people of São Jorge.
