The vinification of Monte das Ânforas wine takes place in the new and modern Quinta do Carmo winery in Estremoz. Traditional winemaking techniques are used, with short macerations where the grape varieties are vinified separately in temperature-controlled stainless steel tanks to preserve their fruity aromas. At the end of fermentation, the wine is blended, resulting in a modern, young, and fresh wine.
